Homemade Chicken Noodle Soup

Comfort in Every Spoonful

Classic chicken noodle soup stands as the quintessential comfort food, a warm
embrace captured in a bowl. Imagine tender morsels of chicken, perfectly cooked and
swirling midst a medley of vibrant vegetables and plump egg noodles, all basking in a
rich and aromatic homemade broth. The fragrant scents of sautรฉed onions, carrots, and
celery waft through the air, promising a dish that nourishes both body and soul.
Iโve lovingly crafted this soup for decades, a treasured recipe that never ceases to
provide solace, whether itโs to ease the discomfort of a cold or simply to offer a warm
hug when life feels a bit too chilly. The secret lies in cooking the chicken directly in the
simmering broth; this transformative step infuses both the tender meat and the golden
liquid with an extraordinary depth of flavor.

This soup has rightfully claimed its place as my most frequently made recipe, celebrated
for its nourishing qualities, delightful taste, and the way it can turn even the gloomiest of
days around. Each spoonful reveals succulent chicken, soft, springy noodles, and
perfectly cooked vegetables, all resting in that rich, golden elixir that soothes and
rejuvenates. With every bite, it’s as if each element sings together, creating a symphony
of comfort and love in every delicious serving.
Thereโs nothing like a pot of homemade chicken noodle soup to bring comfort on a cold
New York day. With winter temperatures settling in and our medical office filled with
patients fighting seasonal illnesses, I wanted to do something special for my
hardworking staff. I went upstairs to our kitchen and made my famous chicken noodle
soupโwarm, hearty, and made with love.

This soup starts with the classic way: white onions, carrots, and celery sautรฉed in
avocado oil until fragrant and tender. I use egg noodles for a heartier bite and season everything with bay leaf, rosemary, and thyme for that slow-cooked, soul-soothing
flavor. Cooking for my staff is my way of saying thank you for their dedication,
compassion, and long hours caring for others.

and beautiful. This is more than soup; itโs appreciation in a bowl.

1 Rotisserie chicken
1 Medium yellow onion
2-3 Carrots
2-3 Celery stalks
2 cloves garlic
1TBS Avocado oil
1 Tbs Salt
1 Tbs Black Pepper
1 Tbs onion powder
1 Tbs garlic powder
1 Tbs Chicken Boullion
2 Bay Leaves
3 Fresh Thyme sprigs
2 Fresh Rosemary Leaves
6 Cup of chicken broth
2 Cup Water
1 bag egg noodles
Directions:

Start by carefully shredding the rotisserie chicken, a step that sets the stage for a
heartwarming meal.

In a large Pot allow avocado oil to warm over medium heat, creating a canvas for flavor.

Chop the onion, carrots and celery, adding them to the pot where they will release their natural sweetness as they sautรฉ for 5-7 minutes, transforming the kitchen into a haven of comforting aromas.

Next, mince the garlic, inviting it into the mix for an energizing burst of flavor that will
elevate the dish. Reduce the heat to low and pour in the rich chicken broth and water,
along with an array of seasonings and fresh herbs that evoke warmth and nourishment.
Let this simmer for 15 minutes, as the ingredients mingle and deepen in flavor, a
reminder of the magic of home-cooked meals.

Add the shredded chicken to this fragrant pot, stirring to combine and bring it back to a
vibrant boil over medium-high heat.

Introduce the egg noodles, allowing them to cook according to package directionsโabout eight to ten minutesโtransforming the dish as they absorb the broth and release their starches, creating a comforting, slightly thickened soup.

Once the noodles are tender, remove the bay leaves, letting go of any unnecessary
elements. Taste and adjust the seasoning, crafting a soup that speaks to the soulโa
rich, golden broth brimming with chicken, vibrant vegetables, and comforting noodles.

Ladle the creation into bowls, garnishing with fresh chopped parsley that symbolizes
vitality.

Serve hot with crusty bread or crackers, and relish this classic chicken noodle
soup, a true celebration of comfort and homemade devotion.
