Taco Bell Mexican Pizza Recipe

It’s been sad news for us fans of Mexican pizza since the pandemic hit, and Taco bell stopped making it in their restaurants. Although Taco Bell has been bringing back Mexican pizza for a limited time, they have not been able to keep up with demand. Unfortunately, in my area, they never got it back after the pandemic. According to their website, they are working to bring it back to restaurants, but there is no specific information on when this might happen.
Lucky for you, you can use my recipe to make your own, and with these unique tips and tricks, it will be as good or better than Taco Bell’s.
INGREDIENTS NEEDED
Ground beef
Taco seasoning
(or MAKE YOUR OWN!)
Water
Refried beans
Enchilada sauce
Shredded Mexican cheese blend
Flour tortillas
Vegetable oil
Directions:
Preheat the oven to 400F. In a large skillet, brown and crumble the ground beef.
Drain excess fat. Return the cooked meat to the skillet, add the taco toppings packet and water, and mix. Add in your scallion and season with garlic powder, onion powder, and ground red pepper if you want an added spice. Bring to a boil, then lower the heat and simmer until thickened.




In a large skillet, heat the oil over medium heat. Add tortillas (one at a time) and cook for 15-30 seconds, turning often) until crispy. Continue with the rest of the tortillas.


Meanwhile, heat the refried beans in a microwave-safe bowl or small pot
This process will make it easier to spread the beans over the tortillas.
Assemble pizzas:



On each tortilla, spread a generous layer of refried beans. Then top with seasoned ground beef.


Place another tortilla on top. Spread about two tablespoons of enchilada sauce on top.









Then put grated cheese on the sauce. Finally, continue assembling the rest of the pizzas.




Arrange the pizzas on a large nonstick skillet and cook until the cheese is melted about 8 to 10 minutes. Serve with your favorite toppings!
Variations
How to make them healthier? These things are more beneficial if you add more nutritious stuff like tomatoes and olives and limit the unhealthier things like cheese and beans. But keep in mind that this won’t help it taste super good. You can also use corn tortillas instead of flour, as corn tortillas are slightly healthier.
Other types of meat?
We used ground meat in this recipe, and you can use ground turkey or pan-fried ground chicken nuggets. Whatever meat or even a meat substitute you decide to use, we suggest you continue to use a little taco seasoning.
Variants? If you wish, you can change several things in this recipe:
Garnish with Jalapeños
Season the meat with the various toppings of your choice
Make your refried beans creamy or spicy
Sprinkle with hot sauce and sour cream!
