Succulent tender chicken in a mouthwatering marinade, skewered and grilled to perfection. This grilled chicken marinade is the best! This easy chicken marinade recipe is my go-to every time I grill chicken. This marinade is prime in our household if the chicken is on the grill. It’s most likely being marinated in this recipe. These ingredients came together randomly. I wanted to marinate some chicken, and I searched around my pantry for staple ingredients. You can use chicken breasts or thighs. After that, it’s up to you; it doesn’t matter which is used. If you do not like the veggie combination I chose, substitute your favorites! What’s great about these grilled chicken kabobs; they’re easily altered to fit each person’s taste buzz. I make two marinates, one for the chicken and one for the vegetables. The distinct taste of the vegetable and chicken is a party in your mouth.

INGREDIENTS

1-pound boneless skinless chicken breasts cut into 1 inch pieces


For the Vegetable Marinade

1/4 cup olive oil

1/3 cup soy sauce

1/4 cup honey

1 teaspoon minced garlic

salt and pepper to taste


Chicken Marinade:

¼  Lemon Juice freshly squeezed

1 tablespoon garlic minced

½ cup olive Oil

¼ cup balsamic Vinegar

¼ cup Worcestershire sauce

1/3 brown sugar

¼ soy sauce

2 teaspoon dried Italian seasoning

1 tablespoon Dijon mustard

2 teaspoon Black pepper

1 teaspoon Kosher salt


1 red bell pepper cut into 1 inch pieces

1 yellow bell pepper cut into 1 inch pieces

2 zucchini cut into 1 inch slices

1 red onion cut into 1 inch pieces

½ pound of Cherry tomato 


INSTRUCTIONS

Place the olive oil, soy sauce, honey, garlic and salt and pepper in a large bowl with vegetable of your liking. Whisk to combine cover and refrigerate for 1 hour.

For the chicken marinade place  the chicken in  a large bowl and let marinade for 8 hours or overnight using the ingredients above.

Soak wooden skewers in cold water for at least one hour. Preheat grill or grill pan to medium high heat.

Thread the chicken and vegetables onto the skewers.

Cook for 5-7 minutes on each side or until chicken is cooked through.
